First date at your house? Need something special yet easy to do? This recipe should do the trick. You will need the following ingredients:
easy Parmesan chicken
Chicken breast boneless and skinless...2each (about 6oz. a piece)
Eggs beaten...2each
Parmesan cheese grated...6oz
Flour seasoned with salt and pepper...to taste
Corn grits also known as polenta (try Bob's Red Mill brand)...follow directions on the package
Tomatoes diced fresh...2 each
Garlic cloves minced...2 each
Lemon juice fresh...1 tablespoon
Chives fresh snipped...1 tablespoon
- Make the grits, keep warm.
- Dredge the chicken breast in the seasoned flour.
- Dip into the beaten eggs and then roll in the grated cheese.
- Saute the cheese coated breast in a medium hot saute pan with a little splash of olive oil.
- Brown both sides of the breast and finish cooking in a 325 degree oven.
- This will take about 10 minutes. Just enough time to make the sauce.
- Heat a saute pan, add a shot of olive oil and the garlic, saute quickly don't burn the garlic.
- Next add the diced fresh tomatoes, cook until they begin to soften.
- Finish the sauce with the lemon juice, chives, salt and fresh black pepper.
- Place the grits in the center of plate and the chicken on top and at an angle.
- Spoon the sauce over the breast.
- Serve with champagne. Good luck ;)
